Owner & Beekeeper Steven Lee is a Former Chef, highly passionate in the production of honey from the hive to the jar.
Having previously overseen production at a long established honey producer, Steven found himself becoming increasingly fascinated with the unique varieties of honey which originate from different trees & plants and in 2016 Natural Hive honey was born.
At Natural Hive Australia, we pride ourselves on keeping our honey simply raw and 100% natural. Raw honey is a super-saturated solution comprised of approximately 40% fructose, 30% glucose and 17% water, as well as other various natural sugars (maltose and sucrose), carbohydrates, vitamins and minerals. As a result, crystallisation can arise within our beautiful products, a completely normal occurrence, as the natural sugars separate over time. Crystallised honey is still safe to consume, and can easily be remedied by placing the jar in hot water, in a warm area, or under the sun for a short period, until it returns to its liquid state. Additionally, though our hives remain stationary in coastal areas, the flavour profiles within our honey may change seasonally, according with flora availability within the hives' surroundings.
